Below is a little more info on the process that goes into making this unique offering:
"Water is harvested from a couple of choice locations along the Bay of Fundy to create this distinctly East Coast Canadian product. Taming the infinite variables that the ocean brings is all part of the science and art of salt-making – weather, tides, salinity levels and mineral content are all things that must be considered and respected in this delicate balance. The Bay of Fundy boasts the distinction of having the highest tides in the world – salt water rushes in and out twice a day, constantly replenishing itself. The water harvested is first filtered, boiled, then slowly evaporated. The resulting crystals are then carefully skimmed from the brine and dried further. ‘Annapolis Salt’ is intended as a premium flaked salt, to be used as a finishing salt on the finest dishes. It adds a gorgeous briny deliciousness to whatever dish it graces – it elevates."
